This is the best of both worlds in regards to flavor, luxurious tenderness and loads of marbling. Cattle roaming free on pasture for two years, eating nothing but nutritious grass then mustered off the island and finished in a sustainable managed feedlot on a traditional Japanese feeding regime consisting mainly of barley.
