Prepare The Perfect Cape Grim Steak
The characteristics of natural pasture-raised beef are different than conventional grain-fed beef, so it stands to reason that you need to adjust how you prepare it.

Here are the 5 steps to prepare a perfect Cape Grim steak.
1. Preparation
Bring your steak to room temperature; this allows for more even cooking from edge to edge. Some thicker steaks require almost 30 minutes! Dry your steak off lightly with paper towels and place on a seasoning rack.

2. Seasoning
Proper seasoning is key to bringing out the natural flavor of Cape Grim Beef, simply season with some Kosher Salt and Cracked Black Pepper on all sides before cooking. The goal is to bring out the natural flavors of the beef, not to taste too much salt or spice.

3. Medium High Heat Cooking
Whether cooking in a pan, over a grill or in a broiler, Cape Grim beef benefits from slightly lower temperatures than a traditional corn-fed beef. It has a lower moisture content and better results are attained from slightly gentler heat.

4. Two Step Cooking
For thicker steaks or bone in chops, Cape Grim Beef benefits from this method tremendously. Preheat your oven to 350 degrees Fahrenheit and follow the previous steps. Once you have achieved caramelization on the outside of your steak, transfer to the oven on a sizzle plate and cook until just below desired internal temperature.

5. Resting & Service
