Our Vintage Beef is truly unique.

Aged 5-9 years for a rich, developed grass-fed flavor.
We selected our best breeding cattle and matured it “on the hoof” for a minimum of 60 months, twice the age of traditional beef. These animals live their entire lives on pasture, eating nothing but the mineral rich grass in Tasmania and Gippsland. Possibly the best places in the world to grow grass-fed beef.
The natural environment combined with longer time on pasture creates a whole new eating experience. The steaks are rich and intense in flavor. The texture of the meat is wonderfully complex. Beef aged “on the hoof” is a perfect protein choice for chefs looking to show off their skills.
